My Little Helper.

It is no secret that I HATE housework. Good thing for my husband, or we would probably live like those people in Hoarders...


Well, not really but I've always had a flair for the dramatics :-)

Every Sunday, kicking and screaming, I help Kyle clean the house. I generally get stuck in one room for hours, while he does the rest... I rock. Anyway, yesterday, we had a little helper. She was awesome at dusting! She didn't even knock EVERYTHING over while "helping," either. And by didn't, I mean she did. EVERYTHING. But gosh darn, it was cute :-)



I hope everyone had a loverly weekend. We sure did! 

We got to hang out with our favs, Brent & Megan a couple times, which is always enjoyable! They are moving into Brent's grandmother's house right now, which is just down the street from us! WEEEEE SO HAPPY.

Last night we had some friends over for burgers. It was oh so fun. I had one to many Pimms, and kinda don't feel so awesome today. Good thing the midgets are being extra adorable :-)

How to get your picky eater to eat...

Zucchini.

Do you have a picky eater? All of the sudden, I do. All Lucy seems to want to eat is bananas, cheese, and bread. Healthy, huh? So, in an effort to get her to eat something, anything green, I made her some Zucchini Fritters last night.


Oh, how I do love this little gem of a cookbook. Its from Williams Sonoma, where all the best things are from. Now, as you may remember I don't use measuring utensils or ever follow recipes in my cooking endeavors... So I will provide you with the recipe as it is in the cookbook, but I added a bit here and there. I'll put my additions in (parentheses).

Zucchini Fritters

2 medium zucchini, trimmed (I used 2.5ish)
1/4 teaspoon of salt (I used sea salt, just a dash)
(a dash Lawry's seasoning salt)
6 tablespoons cornmeal
2 tablespoons all-purpose (plain) flour
1/2 teaspoon baking powder
1/4 teaspoon sweet paprika (I used regular and prob more than 1/4 t.)
1 large egg lightly beaten
1-2 tablespoons canola oil (I used vegetable and enough to coat the pan)


• Using a large grater-shredder and shred the zucchini into a bowl. It will be about 2 cups-ish. Toss with salt and Lawry's. Let stand for 15 minutes to drain. Wrap the zucchini in a paper towel and squeeze out as much moisture and possible. Return to the bowl.


• In a small bowl, stir together the cornmeal, flour, baking powder, and paprika. Add the zucchini and egg and stir to mix well.


• In a large frying pan, warm the oil over medium high heat. Using a spoon, scoop up the batter and make a dollop into the pan, use the back of the spoon to flatten each portion into a cake. Cook, turning once, until golden brown, 3-4 minutes total.


• As they finish frying, transfer the fritters to a plate lined with paper towels to drain.


YUM!
I served my fritters with a spicy ranch dipping sauce (ranch and cayenne pepper).


I think Lucy like them...

Just Another Manic Monday...

Good Morning Lovelies!

Today has been hectic already... Its 9:03 and I am ready for a nap!

I got up right on time late for Yoga. No time to take coffee, I sprinted to the The Yoga Room, walking right in the middle of meditation. Glares from all around... Rushed home (so much for staying centered, blerg) to make sure everyone was up and getting their breakfast... Its was like a hallmark card when I walked in: Kyle was feeding Penny a bottle on the couch, Lucy was munching on Cheerios, fruit, cheese cubes, and a whole wheat bagel while the Beatles Penny Lane plays softly in the background...

The house is (relatively) clean.


I collapse on the couch and gulp down some coffee. Basking in the domestic bliss that is my life. Ahhh...

Life is good. Life is quiet.

...And then Kyle leaves for work. And all hell breaks loose.

In a matter of .6 seconds my house looks like Toy R Us exploded.


We got a hair cut. The bangs go slightly terribly awry.


We throw a huge tantrum...


Why? Because we want ice cream, obvi.


We settle for some cheese puffs. At 9am.


And now, we need a bath.


All the while Penny plays happily in her pod.


At least I have one that is mildly behaved... For now :-)

Why so serious?

What could be capturing this little one's attention so intently? 


 What could she possibly be so focused on?


Why, her potty DVD, that's what! That's right ladies and gentleman (there's only one of you :-) ha!) I am attempting to potty train the monkey. She has been telling me when she is wet and/or has a poo for about a month now, so I think its time to start trying! We got her a potty DVD from Huggies (we are a Pampers family, but Lucy loves this DVD) which she is mesmerized by (clearly), we rock out to the Potty Dance, and she even has her very own Wee Pod! So far, she seems to think the Wee Pod is the Wonder Pets "fly boat" and not so much a potty chair... Oh well! We'll get there :-)

I'm too lucky!

Aaaaaand I'm back! I had to take a mini break from blogging. I have just been super busy with the midgets. But I'm back now and I have some updates for you:

Lucy Olivia 
16 months
 This girl is outrageous! Love it! 

• She is 23lbs (46%) and 32.5in (74%)
• Runs & runs until she literally falls over asleep. Its hilarious.
• Eats like a bird. I wish I ate like that girl, I'd be skinny in no time :-)
• Says the funniest things! Current favorites: "Oh grrreat!", "Oh fiiine!" (both very sarcastically, if she could roll her eyes she would) "That's gross, mama!", "Ohhh wow! That's cool!", "Relassss, mama..." If you know me, its obvious who she is mimicking in all of these... I would raise a cynical 16 month old. :-)
• Sleeps 12 hours, straight through the night.
• Is still in 12 month clothes and size 5 shoes.
• Has the most beautiful smile that literally lights up the room.
• Is a wonderful big sis. I'm very lucky.

Penny Lane
10 weeks 
 Sweetest thing ever! Loves it!

• She is 10lbs (30%) and 22in (47%)
• Starting to hold her head up really well. Loving her bebe pod!
• Eats 4oz of formula every 3 hours.
• Has been on formula since 7 weeks. Makes for a much happier baby :-)
• Sleeps 6 hour stretches at night.
• Has the sweetest coos and giggles. Yep, she belly laughs, a-mazing!
• Is still in newborn clothes... They are still a bit big on her! Tiny.
• Her smile is infectious. Absolutely beautiful!
• Is a little angel. I'm very lucky.

So, there you have it. The monkeys are getting too big! Everyday seems to be in fast forward. I blink and miss it. Its heartbreaking and fun all at the same time. I might be the luckiest girl in the world :-)
