Mission Skinny Jeans Week 3

Here we are week 3 of the hCG diet! Only 3 more to go! Ugh, that seems like a LOOOONG time! I think I can, I think I can! :) Really, it is starting to get a little boring... But then I step on the scale every morning and get rejuvenated see my weight drop by at least .5 lbs! And I'm more than half way to my weight loss goal of 25-30 lbs!! WOO HOO!!!

hCG Diet - Week Three
Weekly weight lost : - 5.8 lbs
Total weight lost : -17.4 lbs
Weekly inches lost : - 2.5 in
Total inches lost   - 16 in
Bust : 0 in (1.5in)
Waist : .5 in (2.5in)
Belly : 1 in (5.5in)
Hips : 1 in (4.5in)
Inner thigh : .5 in (2.25in)
Bicep : 0 in (.25in)

Starting jean size : 6
Current jean size : 4 (but getting baggy!)

I wanted to share a yummy recipe with you, I adapted it from the recipe found HERE. I made this last night and paired it with a small filet mignon. It was fantastic! So yummy, so hearty, and SO HEALTHY! Even if you are not on the hCG diet, you should try this. You will not be disappointed! It was quick and easy too. Note: Saffron is super expensive but makes the recipe so just use a pinch! You'll thank me :)

Saffron Cauliflower Pilaf
(yield 2 small servings - you may want to double the recipe for non-hCG eating)
        • 1 cup of chicken stock
        • 1/2 yellow onion, chopped small
        • 2 cloves garlic, pressed
        • 1/4 c diced plum tomatoes
        • 1 1/2 tsp paprika
        • 1 tsp fresh thyme
        • a pinch of saffron
        • 1/2 head of cauliflower, chopped small
        • salt and pepper to taste
        • a squeeze of lemon
  • In a dutch oven simmer chicken stock with onion, garlic and spices until onions are tender. About 3 minutes.
  • Add cauliflower and cook for 5 minutes
  • Simmer on low heat until cauliflower is tender. About 20 mins.
  • Squeeze a wedge of lemon on before serving to brighten the flavours
