oh hai.

Because I love you, and this is delicious. Maybe I'll posts again in 6-9 months ;) ENJOY! 


1 - 32oz box of chicken broth (I use Swanson 35% less sodium)
4 cups of water plus 1/4 cup of water
2 large chicken breasts - I buy a rotisserie chicken and use those breasts
1/2 package of Lawry's Fajita Seasoning
1 small yellow onion
2 Tbls of EVOO
1 bag of frozen cut corn
1 - 10oz can of Original Rotel
1- 14.5 oz can of petite cut tomatoes
1/4 cup of diced green chilis
2-3 Tbls of chopped fresh cilantro
1 cup of beer (optional)
A small can of sliced black olives (optional)
Fresh squeezed lime juice from one large lime
Tostitos "Hint of Lime" tortilla chips
Shredded cheese

To make:

Shred the 2 chicken breasts. Make sure to remove all the skin and fat.
Chop the small yellow onion - make sure to wear your onion goggles (see below)
In a frying pan heat the EVOO and add the chopped onion. Saute until see through (about 3 mins)
Add the shredded chicken, 1/2 package of Lawry's Fajita seasoning and 1/4 cup of water. Reduce heat and cook for 5 mins

In a large pot, bring the 4 cups of water and chicken broth to a boil. Stir. (You may need to add some more water later, use your best judgment.)
Add the Rotels, tomatoes, and green chilies - ALL DRAINED. Stir.
Add the cilantro, lime juice, frozen corn, olives and stir.
Add the chicken and onion mix. Stir.

Allow to boil for 15 minutes.
After 15 minutes reduce heat to low.
Add the beer, if you chose, I recommend Michelob Ultra Cactus Lime.
Let simmer for at least 20 mins. Longer is fine!

Place a handful of the lime tortilla chips in the bottom of a bowl.
Ladle soup over the chips and top with shredded cheese.
